I tried to make them bounce before, it didn't really work out. They are by the way, the same grenades as in vTW, but without the wobbling :P

Because grenades fly like that? When you throw a grenade, it will wobble.

I would imagine the reason they threw grenades was to increase the time spent in the air, as a balance tweak. Remember how high they would always through them? Even so, I think the launchers look cooler so meh
