Just wondering if it's possible to change the FOV after the install? Had a quick look around but didn't find any obvious way to do so.

Also does anyone know the correct FOV for various aspect ratios? I'm using 16:9 (1920x1080) and 85 FOV feels a tad high.

85 is exceptionally low, a normal FOV is 90 - 110. A shitty console FOV is 70 - 80

Depends on your preferences, don't be an ass.
If you want to change it without reinstalling anything, open up the first part of the mod, go in the data folder, then the bin one. If I recall well those files with the fov suffixes are what you need. Pick the one that suits you, rename it to xrGame.dll and put it in your bin folder. It should ask you to replace the previous one

It actually depends on resolution, the size of your display and your distance from it. Also different games tend to interpret FoV numbers differently as they base them on different factors. I play on a 42" HDTV as my display at 1920x1080, and anything higher than the default FoV creates a terrible fish-eye effect where you can clearly see the view at the edges of the screen is distorted. Same thing happens with most other games if I try to raise the FoV above 60-70 degrees. If I was playing on a 20" monitor that's 50 cm in front of me, yes, it would be better to use higher degrees of FoV.
