Because space battles need to be EPIC.

Hmm... I think the Mon Cal's fighters will be enough to give the rebels a shot at winning the fight. Unfortunately though I don't think the Mon Cal will come out of there alive.

in terms of heavy weapons fire, the MC80 will be able to deliver a salvo of 7 dual heavy turbos per side of the ship. The ISD will be able to deliver a salvo of 9 heavy dual turbos per side of the ship.

While the MC80 has superior shielding, sheer firepower favors the ISD.

True, and when you factor in both ships' ion cannons and all their other weapons... This will be an interesting fight.

you also have to remember the little bit about the Carrier roles of each ship, and in this regard, the Liberty wins.
remember that only 12 of the compliment of 72 TIEs can be effectively used against the Liberty while her shields are still up.
the Liberty's Air Wing is made up entirely of fighters that can be effectively used against the ISD. a volley of 48 Proton Torpedoes and 24 Concussion Missiles (assuming a wing of 12 X-wings, 12 A-wings, and either 12 B-wings or Y-wings) can do a good bit of damage against the shielding of an ISD.
additionally, the Ion cannons of the Y-wings/B-wings, as well as the Heavy Laser of the B-wing, if that is used, can add some punch to the salvo.

tactics and training are also something to consider

the Captain of the Liberty knows that his ship is one of the most valuable assets in the RA/NR Fleet, and that if he loses his ship, it will mean a great deal to the RA/NR Fleet.
there were over 25.000 ISD's. the Imperial Navy, as well as individual ship captains, could afford the loss of the ship and her crew more easily than the RA/NR.
this is going to lead the Liberty Captain to be more cautious than the Imp Captain.
if the Liberty Captain were so inclined, he could withdraw.
or if he has to engage, he can use the superior sublight acceleration of his ship to his advantage, as well as let his fighters go after the Imp fighters to thin them out, potentially launching their own strikes against the ISD

additionally, going with the Tactics part of my statement,
ISD's were expected to be able to work independently of supporting elements like Light Cruisers or Frigates.
Due to their rarity, Mon Cal Star Cruisers were often assigned escorts, typically a Cruiser, usually of the Neutron Star or MC40 class, one or two Frigates, normally a Neb-B, with occasional backup from a DP20, and between one and three Corvettes/Gunships, normally CR90s.
in fact, the only time I can remember an MC operating totally independently of a fleet was in X-wing Alliance, with the Liberty temporarily operating without her fleet to perform a sort of armed reconnaissance and investigate the TIE Experimental Program. which almost ended very badly for the Liberty

even as the NR Fleet was formed, and became more powerful over the years, MC80s and their equivalents very rarely operated alone for short periods of time, even with the Nebula-class, and that ship could wipe the floor with the Liberty

so the chances of encountering one totally alone are slim

So how would the MC80 fare against the ISD MK 2 or would that be about the same as MK 1?

the ISD2 would probably win. improved firepower on the -2 kinda levels the playing field

My money would be on the Star Destroyer though in movie logic a couple of Y-wings can completely disable one with a few Ion Torpedoes so the MC-80 would never lose on screen. Rebel fighters are OP in everything (movies, games etc) so they'd probably be the decisive factor but ship to ship one is a dedicated warship and the other is a converted passenger liner. Star Destroyer has better firing arcs and should be able to pound the MC-80 down quite a bit on approach since it's frontal arc is it's deadliest arc while the MC-80 needs to broadside to bring more weight to bear.

The shields were already down, so the (even Ion) torpedoes on both sides bombers would be of little use, as the heavy guns on both capital ships could do more, including the Heavy ion cannons on the ISD-1

Idk man, I still consider the MC80 Liberty and the ISD 1 roughly equal overall. Really hard to choose.

Description

So, wanted to show this again, we originally showed a greyscale version of what we expect to see in the game long ago, thought it would be fun to show the same scenario in color.

The reason we texture the way we do is because of the cinematic cam. We are trying our best to take full advantage of this great feature. We are striving to develop the best possible feel of immersion that we can, so that while playing, the player can select a fighter, and press "C" to activate the 'chase camera" and follow fighters through the midst of combat.

Soon we will have these behemoths rigged and game ready, and then we take a video showcasing this.

Here is the original concept:
