I offered the same idea, but other galaxies are to far away.

The length of hyperspace routes are not entirely the problem, it's just that not every starship is capable of travelling that far in one jump.

Main problem with hyperspace travel as conceived in SW are obstacles such as real-space objects and distortions. That would become rather mute in the intergalactic void, one could assume.

As for distance and time, if they can travel from one end of the galaxy to another or even just into the core in a matter of weeks, days, hours, a straight hyperspace jump out of the galaxy to such a position shouldn't be too much of an endeavour either in that regard.
During Ep V they already had been quite at the edge of the galaxy as well.

there is a hyperspace anomaly on the outside of the galaxy preventing travel to and from it. the same type of thing cuts the unknown region in half.

I concur, the images in the movie are more realistic. Galaxies are relatively "flat".
So a star system forming at this angle and distance from the center of the galaxy is highly unlikely, I might even dare to say impossible. I would consider lowering the angle.

(disclaimer: sorry if this seems like nitpicking but I've just watched Interstellar)

this is a new star map that is actually in the game. Outer Rim worlds that are on the fringe will all have the Core Galaxy being shown in the sky as battles take place, this is due to their far remote location. Such planets will include Hoth, Bonadan, Dac, Csilla, Bakura. These planets will also include any relevant nebulae.
