Would you recommend this mod for someone who has never played morrowind before? Vanilla looks is just over that tip of "to old" for me to properly get immersed and i don't have any nostalgia to wipe on my screen to get me through it. This mod looks pretty amazing.
I think so, all things considered. Especially if it interests you. Go for it!
Why not try Morrowind 'vanilla' first, then use the mod(s) There are graphic mods that enhance but don't take away the core gameplay. I absolutely rated Morrowind incredible when I played it on release with my GeForce 4 DX 8. Along with all DLC. It's on GoG if you can't get a copy
I'm in the middle of a game using your previous release and I've been using Belmora as a base of operations, how will updating to this current version 2 impact my world?
There are quite a few changes in part 2 so I guess it depends where exacly that base of operations is located?
Does this work on mac? It just keeps trying to open in VLC
Best bet is to use OpenMW, which you can download here: Openmw.org
It's a new engine for Morrowind (you have to have the original installed though).
Do you need part one and two? Also does it play more like a skyrim or an updated morrowind?
Each update is the full version, so you just need the latest one: Part 2.
It's more of an updated Morrowind.

Why is the file called Part 2?
Because it was the final update of 5.0. This is the full version though, no additional files needed.
Better to call it 2nd edition or something like that. The name part implies that it is a "part" of a mode. Meaning it needs part one. I finally figured this out by reading, but I was confused at first.
