I gotta disagree. Just because they changed does not mean they are dying. Making games fps games like this now is just more financially viable than the old way of doing it.

Its the unity engine. Chances are he used to a tool that recorded the physics play out then just make that into an animation. Its literally the least expensive way to do it.
Edit: just checked the asset store, this is how he did it. He made the tool to do it and released it.
syncing the physics over a network would be ridiculously expensive on bandwidth. This way when the towers legs are blown out a call is made to all players saying this has happened play this animation.
Its not really dynamic. Its still just an animation that plays, same way dice does it.

Holy tit balls this is awesome, my 1 criticism is that the hearts/health are the only thing without a black outline and it just blends to much.

That hand mechanic is really great. The camera seems really fluid too! You should consider using pro-builder 2 from the unity asset store. It will cut out the need for sketchup and will allow you to make awesome levels in no time.
