So after few tests I choose to go with option 1 (To add Mother Visceriod with medium size)
However "Mother Visceriod" name was changed to "Adult Visceriod" to fit the game better
I failed at adding merge ability so I gave up on it, If I will try it again I may do what ErastusMercy suggested and give the normal Visceriods Evolve ability that can only be triggered via certain environmental factors (most likely blue Tib crystal)

Yea, but unfortunately EA game them new look since TW and I don't know how to make new models for the old ones myself, I didn't saw any mod who made new models for them so far, probably because people felt it just ganna be waste of time
Take it from me, it's actually a lot harder than it sounds to model an amorphous blob. Maybe if it was a different engine, you could take a page out of Grey Goo's book by having them be a simulated volume of what I believe to be fluid particles, but whether the engine supports that is only one of many problems.
Have you considered giving them an ability similar to the avatar's in which a single visceroid devours another to get the upgrade?

Yea that actually what I tried and failed at, not to mention that then you most likely could tell visceroid to devours itself (Well I assume you can somehow tell it to ignore Self but don't sure)
