Me too... Everything is on low but crank it up when I pause it for some glamour shots

Well as far as maps of 3-5 systems, I always run everything on max, and I only have an i7 U4500 ^^
However, anything with 70 or more planets will almost always crash sometime at mid-late game if you're playing with say 8 players, no matter what settings you put it on.
I swear if there were a "turn off textures completely" the game would still crash :(
What are your specs?
There is still no cpu that can run SoSE without problems
But I am optimistic and think that tech will catch up in 2025
that problem is more related to Sins engine rather than your system spec's
