I know where you saw them, but how did you get that they were men of House Brax?
Arya states she noticed Brax soldiers/banners during the time she was in Harrenhal, there is also another number of clues, purple Brax shield, possible Brax banner in the background that's purple. They have tints of purple on their armour. It was believed that they could be Amory Lorch's men but from the armour he wore during the meeting with Tywin at Harrenhal it's unlikely, the colours also do not match the Lorch scorpion banner.
Since you've done House Brax will you do House Ferren and House Drox or are you focusing on the main factions first?
since these are both vassals to House Brax.
The likes of House Banefort, Crackehall, Marbrand will take priority - the Houses with known seats in the westerlands. Drox and Ferren is very low priority at this time. The Westerlands is currently complete until the other priorities are dealt with.
This is maybe a bit early to ask, but will House Hightower be added later? And House Dayne? x)

What is the process for deciding how armies will look that have only been seen in the books?
I don't know if this is true but isn't there a Game of Thrones art book that may have armor from the other factions in the books.
No, they're just described in the books by GRRM. There is no actual visual references - the references that are described are not exactly what the team is after either because it doesn't suit the show armour. But it can be made to suit the armour with some creativity.
That designing process has already begun and you will see it in the next patch.
The shows art books will be under strict non-disclosure agreements and they would have no reason to waste their budget on designs that won't appear on the show.
