How many times has starfleet been in a fight with Klingons?

If anything the show recognised this perfectly with the ideals of the Federation forced into conflict with the ideals of the Klingon Empire. Democracy Vs Imperialism, diplomacy vs unbridled aggression, debate vs chest thumping, the rights of sentient beings vs slavery, et cetera.

Additionally, the Klingon Empire in isolation also shows this conflict within itself. Not only was the empire in the pre-enterprise era a nation of law and honour before it corrupted into militarianism, on a regular basis Klingons (at least the best Klingons) would demonstrate that the more 'primitive' aspects to their culture were also some of the most laudable - loyalty, honour, passion, comradeship, ceremony and responsibilities.

Star Trek has always been a discussion on the human condition, never has it been relegated to a simple pretty story.

Democracy and Imperialism are far from incompatible. The Dutch Empire was a parliamentary democracy for the last 100 years of its existence, and despite what they probably taught you in school, the UK was not ruled by a tyrant king in 1776 and had also been a permanent parliamentary democracy for nearly a hundred years (after the Glorious Revolution of 1688 and the signing of the Bill of Rights in 1689). Hell, the United States has been been a de facto imperial power since 1945 and was an explicit one decades before that (just ask all the dead Native Americans and Filipinos).
