Not a great example viddy - you really have to pay attention to the hell knight to see how fast he moves and reacts.

I don't like models from Doom 3D ports...yeah, sprites are better. I remember that in few games is possible to do model-sprites (3d model, but ingame you seen sprites), IDK, but I think Quake do something like this, but sprite version of Doom Hellknight should be easter egg, because sprites looks strange in full 3D game

Yes, they all look dorky. I think the main reason is that the mdl format quake 1 uses takes more skill to make something look good.
But then, 3D modeling is difficult no matter how you slice it.

Seen here - faster monsters. There can also be slower monsters. Speed options can be controlled by server admin, map controls (in this case a generator makes faster monsters) or made by spell / chaos.
