The Torpedo Sphere is a multi use weapon. It can fire proton torpedoes in salvoes of 10 at enemy capital ships causing massive damage. It serves as a mobile repair station for fighters while in combat. It is strong shielded and decently armored, allowing it to take a strong beating. The Torpedo Sphere can fire its proton blast at a shielded planet to immediately collapse planetary shields, then allowing it to bombard cities. The Torpedo Sphere also allows decreased production times of all units when in orbit due to the assistance of its internal manufacturing bay.
Torpedoes Spheres will not be buildable, but there will be a few scattered around the galaxy for use at planets such as Yaga Minor, Corellia, Eriadu and maybe some others.

Does this mean they cannot be moved from these planets?
Means that they are limited in number, unable to be replaced, but they are indeed mobile.
limited number available, but yes you can move them and take them to different planets and attack with them

So would the trick to tackling the sphere to be attack it from the flanks? It looks like the proton torpedo array only fires in a forward arc in front of the ship unless these protons torpedoes are target seeking.

What is that circle in the middle for? Wookieepedia mentions some two-wave gravshock superweapon thingy. Is that what that is?
Nope, those are the 500 proton torpedo tubes, the gravshock thing was not standard issue, and had a ton of problems to the ship itself.
Correct, and the bottom I made into a large open cavern hangar because it seemed fitting to deploy large transport ships for ground assaults
