Med-kits: Essentially everything stays the same as before. Spyro walks into a health kit or uses a health station (which would give you a burst of health and not be gradual) and you get health. Sparx doesn't really serve a purpose other then to be a health indicator and grab gems.
Butterflies: How Spyro games normally function. Fodder would give you a butterfly when killed, Sparx will eat that, and gain health. I imagine health chargers can spit out a butterfly or something, same with vending machines.
Grub nugget: Same as butterflies. This would be a bit less silly for fodder as grub nuggets fit the lore of the game a bit better.
Sparx could shine like a lamp to illuminate dark areas. The player would press the "F" button to make Sparx illuminate the path or stop illuminating.
Just like the time limit and recharge of the HEV suit's flashlight. Sparx will have a time limit to illuminate.
I would prefer a mix between the first two: having butterflies as the main source of healing but also keeping soda and secret med-kits as "super" health
I think med-kits and health stations mesh well with HEV suit, but leaving everything the same as before feels kinda boring, so i agree that a mix is a way to go.
Sodas are fun, and health stations and Xen pools are fixed healing spots, so they are fine as it is. Med-kits could be left for secrets, sorta like shiny butterflies that heal to full health (and maybe 1-ups?).
As for critter to spawn from fodder - definitely should go for Xen creatures, maybe those flying bugs that powered teleport?

Different idea for soda cans - let Spyro pick them up in mouth (with appropriate animation) and spit them out. Would make for a nice ranged weapon.
Why not perform checks and if grub would spawn in hard to reach area instead spawn a butterfly, or something?
The butterflies sounds like the best, my only suggestion being to maybe "Xenify" them so they fit in just a tiny bit better
