With Spain winning the 30 Year War and Charles II of Spain managing to produce an heir, Spain's fall never occurs, thus ensuring her domination of world politics for centuries to come.
The Kingdom of Burgundy, a Spanish-dominated America, French Australia, a centralized HRE, a surviving Commonwealth, and an Austrian Company operating in South Africa are just some of the political entities present in the globe.
With the dawn of industrialization, how will the face of the world look in 100 years? Will the kings of old keep their possessions intact, or will they fade into obscurity, overthrown by their subjects? Only you can answer that question.

And Australia should be known as "Tierra de Juan Fernández", because is very possible that in this alternative timeline Australia and New Zealand would be discovered and colonized by Spain.
I have two suggestions:
1- I Think that the best way to organize the spanish america is be keeping the viceroyalties, incluide Brazil, as satelites states, maybe with spanish infants as head of state
2- New Spain, or Spain instead, should own all Louisiana and the american west.
Other way to organize the spanish america is using the Count of Aranda's Plan of 1783
