How to install regular maps for Age of Kings?
It's pretty simple.
You can install maps by copying the downloaded maps to Scenario folder in your game folder, e.g.
D:\Program Files\Microsoft Games\Age of Empires II\Scenario
You can make/edit a scenario (a regular map) with in-game Map Editor.
Maps are in stored in .scx file format.
To play:
1) choose a standard game
2) select "Scenario ..." in Game field
3) set other rules and play!

How to install random map scripts?
You need to put them in Random folder, which can be found in your game folder, below an example of the path:
D:\Program Files\Microsoft Games\Age of Empires II\Random
To be sincere, you can edit .rms files with any text editor program, such as M$ Notepad, EditPad, Notepad++ (and many, many others).
Remember about the random map filetype - the script/file must have a .rms ending, e.g. myRandomMapScript.rms
You can also use a specific tool for AoEII scripts, like this one (made by [soz]Exekutor):

To play a custom random map, you need to:
1) choose a standard game
2) select Custom in Map Style
3) select the desired random map script (e.g. ES@Canals_v2)
4) set other rules and finally play!

Know of any cool map packs which i could download? I'm heading round to a friends, i've got a few, but they're all made for like 8 players, any good 2 player ones?
