Units in order of apperance;
Infantry row 1: Orc Band, Orc Battalion, Morannon Guard, Orc-drivers, Gorgoroth Battalion
Infantry row 2: Orc Cleavers, Battalion of the Eye, Zigûrun Masters, Mordor Bodyguard, Boldog Wardens (Sauron's BG)
Infantry row 3: Mountain Trolls, Hill Trolls
Archers: Orc Archers, Gorgoroth Archers
Cavalry: Werewolves, Zigûrun Karib (custom BG)

And I bet they get addition units from Rhun and Harad thru the Black Gate too right
The player can only access Men of Rhûn and Harad as mercs (Invasion or normal), with the exception of Zigurun Masters.
However good players will have good reason to fight for Nindalf/Dagorlad, because AI-Mordor can get a camp there, making avilable several kinds of human units.
Amazing! I love that most of the unit models are completely changed. Giving the orcs a more threatening and higher quality look. Showing that they serve the greatest evil of the time.

In the Third Age, they will ditch the shield, the awkward helmet, and the eket for the longsword and an iconic face that we know as the Temple Executioners and Temple Knights.

Hmm, depends on how much sparetime life and modding allows, but within a handful of weeks. They're for certain Nazgûl; the Wraith-king included.
About the Wraith-king, does he look like the standard Witch-king or a hooded Nazgul with a Black Numenorean helmet (karma, winged helmet)?
We've kept the RotK look, with that helmet. It's a characteristic design, and looks good :)

the olog hai did not appeal at the end of the third age??
They're Hill-trolls, who actually are the armed trolls in LotR. The books, that is, it's in fact quite unclear whether any Olog-Hai appear in the books or not.
Do you plan to add some Black Numenorians? :)
