i must admit i can see both sides to this, i do understand that they only did leather because it can be died, however they could introduce paints for other metal Armour, still there could be more in future by the looks of this

Only leather armor can be dyed.

So how exactly will the color system work? I imagine since multiple dyes of different colors are applied, I think each dye will change the armor color towards it's respective color by a set amount.

Its a formal thing, eg. The king of the red kingdom would have a red display sword when no fighting (would be good for the factions plugin)
