I personally think that Ungoliant isn't really suitable for a faction of every kind; remember that she is a powerful dark Maia that doesn't answer to anyone. She did the things that she did only for her interest and her neverending hunger.

Sadly, the RTW engine doesn't allow us 1-man units, so they'll have a troll bodyguard, as Gothmog as said to have in the Silmarillion.
They'll be the most powerful individuals in game, though, save for Morgoth and Glaurung/Ancalagon.
