I always hated the fact that there were only two small rugs in Morrowind. Now there's 7. I also gave the large rugs new textures.

I imagine that in Vvardenfell that it was very RUGGED for those enthused by floor decoration.
In all seriousness, even though there being choice can't really objectively go wrong, I'm sort of in the opinion that a mod of this nature should just give what was made.
What would be really cool is if you had a site that features the optional content you / your team / your volunteers created for Morrowind Rebirth, and basically a feature where it has both "fan-made" content and "official optional" content.
The only issue might be actually paying for this site. I guess there's been plenty of ways made around it since then, but still.
