Could it be possible to just put him at the Crossing the same way there's a lot of lore characters at King's Landing? Is there like any old character models, or is it "simple" to make/change? I have close to no knowledge of modding.
If you want to see some OP archery I recommend you try taking a well equipped Myrish castle/city. Elite Myrish Crossbowmen are IMO the best ranged unit in the game, at least as far as purely ranged attack goes.
I really have to agree in the knight department as well, it seems pretty silly for a knight with 20 strength to have 3 ironflesh and power strike, but 6 in power draw(I'm referring to my heavy westerland knights, idk bout any other faction).
And yeah, random events that **** up your character build is just ridiculous, but apparently Cozur is adjusting it for 2.3(I recommend taking a look at the 2.3 changelog, quite a few of your points are mentioned).

So, how large are these Dothraki camps? Do they vary in size a lot, or do they stay the same? In the same sense, does the amount of troops we need to bring vary?
From my experience sea battles are generally **** and should be avoided at all cost, but I might be doing something wrong idk.
So, when I introduced the Targaryens through completing the quest they were swiftly knocked out of the game as they had no fiefs(already knew about this), but as House Targaryen was falling a few(three) lords tried to join me, but right after I took their pledge they "betrayed" me, joining a different faction. This happened with all three lords, even after I gave some of them fiefs(some even had 100 relationship with me). Why does this happen? Is it some mechanic I'm not aware of, or is this some kind of bug?
I've encountered lords who are displeased with their current liege.
There are some problems when it comes to the mod, but it seems to me that most of these are quest related and/or pathing related. I honestly have never played vanilla, so I wouldn't know how prominent the problem regarding pathing is there, but here you'll most likely encounter some problems in some of the keeps/towns you'll be attacking.
Pathing is the only real problem I've encountered, not much of a quest completioner.
EDIT: Oh, and apparently the Targaryen and Wildling factions won't stick around because they don't get assigned any fiefs, but I haven't noticed it/reached it this time around(only dealt with Targaryens once quite a long time ago).

Me too, only a few people ever do it. Only way I get someone out of their castle is using cheatmenu(can't even get anyone out as the marshal of the faction), but even by using cheatmenu they swiftly go back and never leave untill I use cheatmenu again.
Do you by any chance have any problems with the armies being insanely large when it comes to Broken Men? Mine are in the 20 thousands, and when I engage gang of bandits in a village they all spawn at once(like literally 20k of them) making me crash.
Seems I have the seneschal, chancellor, castellan and what I assume to be a minister. My minister was appointed from one of my companions and not a local noble(I don't know if it makes any difference to be honest). I just speak with my minister and he lets me give fiefs to myself or others.
Works for me, but I do have 4 people at my castle that work there, can't quite remember what I have there.
So, are these Factions supposed to have this many troops? Because at the moment Tyrosh is conquering pretty much everything with their 50k army, and when I try getting taxes as a task from lords I have to fight several thousand peasants who all spawn in at once(making me crash). Not to mention the 30k Broken men armies. Also, almost no lords/parties leave their castles, not even when I, as the marshal, go on a campaign.
