could never side with the imperials... they were about to cut my head off at one point
Yeah, after reading into Lore I just really can't help but side with the Stormcloaks. They have the better cause, and how can you NOT hate the Thalmor?
The Imperials hate the Thalmor though.
But they don't do anything about it.

After looking at the evidence I can't see how one would even think of joining the Stormcloaks. Literally all the issues of Skyrim are because of them.
The Blacksmith of Riverwood said that everyone had their own little shrine to Talos and could worship in their homes, until Ulfric showed up and brought Thalmor attention. The Empire by all accounts stayed out of Skyrim, until Ulfric started his rebellion and brought them there. The Stormcloaks are even responsible for the Dragons appearing as they are the ones who started to put Nord against Nord.
Then there's the fact that they whine about how unfair it was for them to lose. Except Cyrodiil, the Imperials home province, was half burned to the ground. Families were murdered, homes were destroyed, and the Thalmor were within spitting distance of the White Tower. Then there's the fact that Morrowind quite iterally blew up under the Dunmer's feet. Then when they came seeking help they were called racial slurs, threatened, and put into ghettos by the Nords. All while the Nord's STILL proclaim they have it hard, all while getting to go back to their pristine homes and living family getting fat, and drinking mead all day because the Empire signed the White Tower Concordant to SAVE Skyrim, the home of Tiber Septim. Then they stabbed the Empire that sacrificed so much for them in the back.
Not that it matters, the simple fact that Ulfric is the leader of the Stormcloaks is enough to dislike them. He killed Torygg with the voice in a contest that was about skill vs skill, steel vs steel. By all accounts Torygg was a boy, unskilled with the sword. Ulfric was a veteran of the Empire-Altmer war. He could have EASILY killed Torygg in an honorable duel. However he was too much of a gutless honorless coward to even do that. Then of course there's the fact that he's implied to be a Thalmer sleeper agent.
