It's really difficult to say exactly who the "strongest" is. The devs did a great job at balancing a lot of the factions and preventing a single faction from becoming the outright best. Everybody has their own strengths and weaknesses
It's mostly because dragons are elephants and their flying animation/pivots make it difficult for them to really target one another. If they're in an infantry blob they might have an easier time attacking other large units because of their AoE attack

Most gunpowder based units are pretty effective at combating low unit count, high hp units
definitely not dead, if anything I would argue that there's a stronger following. There hasn't been a public release for an update yet but a MASSIVE update is in the works and just nearly ready for a public beta. The wait will soon be over
I'm pretty sure there are a lot of hero's that are being added since 1.01
they've have a rebalance, the bombs have a much larger AoE now, and are really effective against lightly armored targets

It's entirely possible you're seeing the 1.5 beta lobbies, or there might just not be any call of warhammer lobbies going at that time

Empire infantry aren't suppose to be that strong, there are still great swords and each empire faction gets a unique selection of county specific troops. They're being removed because they're not core table top units and their unit slots could be used elsewhere since the mod team only have 500 unit slots they can work with
Believe me, I had the same reaction that you had to losing dismounted knights. I felt like they were integral to how empire works and without them they'd get rolled, but it really just shifts their play-style a little bit to be less dependent on strong, heavy infantry and more reliant on using different unit types together like mages or weapon teams to demolish enemy units
TIS TRUE MY FRIEND! it's not that bad truthfully, you end up relying more on important power units like master engineers/mages/cav and you see overall more creative and balanced empire builds when there isn't so much of a focus into dismounted knight infantry

Try running the game through the warhammer.bat file, usually that helps A LOT on sieges
also be sure that you applied to 4gb patch to your medieval2.exe and your kingdoms.exe
