I do believe it would be 2.9.1 that would be released today, not 3.0... I think, anyways.

Is there any way to get into the ballistics demonstration mode showed in the video? Or a way to make AI just stand there while you shoot them?

Yes, after a long period of inactivity, the team lead decided that it would be best to close the mod. But, there will be another mod by the same team in the near future.
