Turkish ordinary unit list:
Spearmen - Piyade, Yaya

Cavalry Archer - Turkmen, Musellem, Sipahi
Suggestion for certain Unique Units:
Saracens - Mamluk, Abid-Al Shira (Sudanese Slave Infantry with javelin, sword or javelin and spear), Naffatun
Turks - Yeni Cheri (foot archer, later rearmed into musketeer in 1440), Zirhli Nefer Yeni Cheri (armored halberdier), Serdengecti Shock Infantry (armored melee infantry with battle axe or other melee weapons), Legamdji (sappers or engineers)
There's some problem with your cavalry roster, Persian heavy cavalry line should called as Savar or Aswar since Aswar or Savar means cavalry in singular. However Aswaran or Savaran was plural means multiple numbers of cavalry.
The Cavalry roster should have a proper name and skins:
Here's some suggestion:
Persians - Aswar (Azadan), Aswar (Dehqan), Grivpanvar (Clibanarii)
Turks - Askari, Sipahi
Saracens - Askari
Britons - Milites Normanii (since Normans rule England for a while), Knight
Franks - Milites, Chevalier (not Cavalier), Gendarme
Mongols - Baghatur, Heshig (replace Mangudai)
Byzantines - Stratiotae, Pronoiarii (re-skin needed)
Teutons - Milites, Ritter, Reichsritter
Japanese - Bushi, Samurai (Samurai fought in horseback, not on foot!)
Slav or Rus - Druzhina, Dvor, Boyar
Vikings or Norse - Ridder
