Possibly too late in development or not worth the effort, but could modeling shields strapped to the shoulder as part of the armour be a good ulterior work-around for the limited equipment slots? Since especially horsemen tended not to wield the shield but rather wear it...
I feel like the only detail missing is some decorative frescos on the walls; they rarely left austere, stone walls in their chambers. More often, they'd have them painted with quite colourful motifs or scenes.
Ok, really minor nitpick, but watching the video, I read the message "She is coming" and my head immediately went "Wait, western knights prefered stallions." Really minor detail, clearly, but since that's not an arabian horse (which would be a mare - male arabians were considered too hot-tempered to effectively ride into battle), I figure it'd have to say "He is coming".
Comunes dimicatores will be happy for the cameo, I'm sure xD

It looks good, but chausses, especially when laced behind the leg like these, were never this loose. Check the period artwork, you'll see it always gives the effect of tightly fitting wear

The further the project advances, the more amazed I get. This is starting to look fantastic. Very well researched and realized. As I mentioned under one of the screenshots, I really hope at some point you release this as an item addon for vanilla Bannerlord because it is stunning!
It looks so accurate, I love it! I really hope, once your work on the mod is done and it is released, you'll consider also making a simpler mod to just add these items to Calradia. It'd make the setting that much better

Definitely looking forward to further development. The items in the previews are stunning and exceptionately accurate. The one thing that is a little "off" is the white triangular shield, mainly because the source for it is 1250s, but as a proof of concept, it works stupendously. Can't wait to play this. The original "In the name of Jerusalem" is still among my most played mods for Warband
For 1187, you seem to be using too many surcoats, too few hand protections like integrated mail gloves and half gloves, mittens and such. Great sources for this time period are the "Liber ad Honorem Augusti", the "Hortus Deliciarum", the "Rolandslied pfaffen Konrad". The "Vita Christi" in the Morgan library in particular, shows helms painted in quarters as well, which I'd advice you implement.
Judging by some of the shields, you also seem to be using reenactors as a source. If so, try cives_regni_siciliae on Instagram: their work has much more in-depth research than most.
Finally, as a side note, I'd caution against using osprey published illustrations as a source, because they tend to look for unique items in order to make their drawings more appealing but fail to offer a more representative image of what people dressed like at the time
