The middle one is usually the only one you need to use. But if you're UV'ing to a pre existing texture you can use the other one. Although, some games only allow the middle one to be used.

When I uvw and texture a model, I make both the texture and uvw at the same time, when I need a new piece of texture I make it around the uvw, and the other way around too. I find it to work much better than uvwing a model first, and then making the texture, this way I can just make it up as I go along.

When you spend 20 hours on a uvw + texture and not 20 minutes, you can actually make something that looks good.

Kandosii, textured and rigged this time.
Model by me, Geroenimo.
