I think the first two possibilities are way cooler, but in any case, I'm really glad to see the return of flashy trails and the addition of color variety with the red.
Add a orange to red pulsing effect to emulate the heat and make it less "phaserish". I always loved the book's descriptions of the torpedoes boiling the ship's armor and melting through the hull. The red really brings that to mind.

But fleet issue plamsa launcher won't. Of course, different classes of this weapon may exist.

Love the red. Looks better in my opinion, especially since it matches the books now.
I can't look at them and not see photon torpedoes. I mean they look alright but I'd rather a blue or purple tint than a bright red one.
I more like canonical version. Purple torpedoes with elegant smashed tales.

red looks like a its from a brute ship (remember the brute plasma rifle) and I like it very much
