The earliest sallets were developed in France I believe, around the very late stages of the 14th century I THINK. I can't remember the source I'm referencing, so correct me if I am wrong.

origins of the sallet was france.

First mention of Sallets come from Northern Italy, it is the most likely place of origin of this design.

You're 100% correct. I confused early sallets with the french styled sallets, which came later.
I did find an interesting piece of art that depicts a sallet in Italy from the 1340s, which is earlier than I previously thought.

Description

Two early forms of the sallet, or celata in Italian, where this helmet type is first mentioned. The sallet, along with its cousin the barbuta, most likely evolved from light bascinets that were worn without any integral neck defense or visor. This was preferred by infantry in northern Italy, and the resulting design rapidly gained popularity in this century.
