Interesting idea for a modification, but I have a bad feeling that it will not work out ;/.
The colors themselves can be improved if only by a "reshade" like mine: Drive.google.com (corrected)
As for the portraits, the creators themselves decided so, that they should change during battles and it fits well with the game itself. Maybe if you used ai to improve them or created similar like this author: Youtube.com using "Stable diffusion" ;)

And as for modifications I myself made a mini project to add soundtracks from disciples 1 + from dark prophecy, which in rise of the elves were not transferred + "remak'i" author "Denis Kolesnikov" responsible for remake "Battle 2.wav" and "Battle 3.wav" to rise of the elves" Youtube.com , Youtube.com .
