Probably not. It's possible but I doubt any new Covenant ships will be added in the foreseeable future barring the SD.
The sidebar to the video mentions that is not the final balance for the Infinity. The video was sheerly for entertainment purposes and is somewhat misleading imo. 3 CAS have something like 200k HP not including armour. Additionally, Centurians are not strong enough to take out 2 CAS. One can maybe take one Lvl one upgraded. The CAS is a 4km long beast of a ship immune to nukes and the flood.

Ninja edit. I didn't notice the post stating this was for entertainment value. 3 CAS have something like 200k HP between shields and hp. The SD will like provide large scale buffs to the fleet and do insane DPS but will be fairly squishy in comparison to Infinity.

As Stealer has said, the whole large frigates to dreadnoughts can't land thing was just a convenient plot device that made the incorporation of a shuttle viable. We clearly see the SR2 landed/hovering at the start of ME3.

While I understand your sentiments, I must agree with the mod team on this. The CSO is effectively a super sized CAS. I personally would much rather see the new SD or even more covenant ship variety than a giant CAS. That is to say, if an add-on or guide on how to make your own CSO was available, I would most certainly download it.
Space combat doesn't really exist in Destiny to the extent it exists in other franchises that have mods.

SoaSE is horrible for scale. The 4k CAS take up vast swaths of planets where as in cannon they would be specs relative to the planet. This is of course due to scale constraints; we wouldn't want to have cruisers the size of current fighters.
