We're already getting one. It's called the Mandalorian. (5 Years after Endor.)

We also got another one - Resistance. Most of its first season is before Episode VII.

And we also have a few books and comics and even a campaign in a game that's between those Episodes.

Sure they barely scratch the surface and they've barely begun to explore the time, but I doubt we'll see it well explored before Rise of Skywalker. And that way might be better since they either didn't really have a plan for the Sequel Trilogy or burned those plans to the ground and replaced them with something else.

Now, what happens after Episode IX? I don't know - it depends on the Star Wars fans. If they like and care for the Mandalorian, Resistance season 2+, the books and comics, etc. and want more from that Era we might get more. If the fans lose interest after Rise of Skywalker and don't show up for it like for Solo, if Mandalorian fails to catch an audience... then I won't be surprised if we don't see that Era explored further. So we might never learn how Luke created and taught in the Jedi Academy or even where it was, how Ben was tempted to the Dark Side, the splinting of the New Republic and Resistance, etc.

As for live-action TV series (I'm assuming you're meaning live-action) that explores those events, I doubt it'll ever happen. Mark Hamil doesn't want to have anything to do with the "new" Star Wars, Daisy said she's done with Star Wars, Carrie Fisher is dead, Harrison Ford is old, dunno about the other actors but probably they are not that far off. So Lucasfilm will have to replace almost all of them if not all.

Animated series is a far better and reasonable option, a game can work too, books, comics, etc. But again - it all depends how Rise of Skywalker, Mandalorian and other products for that Era are received now and in the next couple years.

And for the fans to care and to look forward to, Lucasfilm must make not only great books and comics, but also of the more flashy media like movies, games, TV series after which the more casual person will go after. And with that Lucasfilm has serious troubles with right now. Will they recover - who knows?

Yeah. SW Resistance is irresistible and enticing. -_-

I honestly think Disney should create an animated series(like TCW) set between episode VI and VII. I'd like to see some familiar faces such as Sabine and Ahsoka(they might even appear in the Mando series:)

Episode IX will either unite or utterly divide SW fans. There may be a serious rift between SW fans in the near future.

I've managed to read some Disney novels. And I'd like to check some comic books.

SW Fallen Order will be a linear, progressive game like Uncharted. Nice visuals, compelling plot, but the replay value may be low. It's more of a cinematic movie than a real game these days.

I'm especially hyped for the new SW trilogy that is set during TOR era. I sincerely hope it'll be based on the KO-TOR game series.
