Chronicles of Riddick, Mirrors Edge, and Crysis come to mind, and there are some games that show your shadow, but nothing else (Quake 3, Battlefront, and I think Rainbow Six: Vegas.)

there was one that showed pretty much everything, the body, the shadows, everything

it's called breed

pretty cool game in some things, like, the millions of vehicles to use, the fact that if you run out of ammo you can ask your fellas for some, and in the multiplayer, every character from whatever team has it's own set of arms and body

pretty nice considering it was from the 2000's
but the game itself is rather ******

I like the idea, but I hate how you only see the legs, If you were to actually look down you would see your torso and legs.

The viewpoint of your average FPS isn't exactly attached to where your eyes are in real life (Usually it's placed a bit in front of it).

This is because, in real life, your field of view is around 140-180 degrees, instead of the default 75 of Half Life 2. This means you see less of your surrounding.

maybe its because ArmA aims for RTS realism. Others unfortunately rather prefer games with science or historical fictional creation (e.g. Wolfenstein(2010)). Still enjoyable though.

Doubt it, since Source has no mirrors. You may be able to see yourself in the water, but if the developer modeled only the legs and a torso, that would look really cheesy.

You should make it so that you cannot look directly below you, cuz you cant do that in real life. It would collide with your legs.
