Asking for suggestions is a humble act. I am glad that you did so. Here are few suggestions

1) Religions system which can be seen in new mods where player is asked to select a religion which will influence in relationships and morale
2) Kingdom Management system that allows to trade/buy fiefs from other lords.
3) Diplomacy mod
4) Recruitment system where the player can hire faction troops form castles and towns rather than collecting villagers and training them
5) Tournament system as in Floris mod pack.
6) allowing the player to start as a lord as in Sands of Faith mod
7) Customizable castles with barracks and more upgrades
8) Adding Siege and Artillery equipments

Make sure you add new faces for both men and women lots of new stuff. You can burrow most of the systems I mentioned from other mods. To be honest most people are interested in Fantasy theme or crusade theme. But its upto you to select what your theme would be.

And make sure you add unique troops and items for each faction whether you are planning to do it historical accurate or not I hope you will give an enjoyable mod :) All the best
