No, actually he says "Die, Sheißkopf!", meaning "Die" as in "Be dead!". The guys who made the Mac family versions of the quotes weren't very good with the German language... though if you're going for the windows version of the game (which I'm assuming you are since the Mac family didn't have any Operation: Eisenfaust) he never says that at all, he instead just laughs maniacally.

after two vocals (diphthong) which is considert a long vocal it should always be an "ß".
It reminds me of Simpsons, where sideshow bob wants to get out of prison and is in front of a court claiming that he is nice, but has "die bart, die" tattood on his skin what the judges notice. He says, no it,s German, it says "dee Bart, dee", and the judges say that someone who speaks German can't be a bad guy^^
