Anybody having the "default menu file not found ui.hud/txt" problem in the future, here are the steps to fix it.
1) Clean install of the base game - delete any additional files left in the folder after uninstalling
2) Install the mod, but MAKE SURE once it finishes installing that it's on the same drive - my issue was caused by the mod installing to the incorrect place.
3) If the mod DIDN'T install to the correct drive, simply copy and paste the files to the actual location where the game is installed.
I realize this isn't the most recent version of the mod, but when I searched for "default menu file not found ui.hud/txt" this was the first result, so I'm writing this here.
