Got to say, it's pretty dumb that she somehow gets a position of power in the New Republic. Otherwise she's a rather interesting imperial admiral.
Given her fostered hatred of the New Republic it was rather ironic.
She had already been on campaign against the New Republic herself and wasn't really a good leader, she rode off the back of her lover Tarkin. A better choice would be Grand Admiral Octavian Grant. He likely didn't hold much of a grudge against the New Republic, sure some Imperial sympathies, but never hatred. He was also a superior tactician.
I think Angelina Jolie would portray Admiral Daala.
