Wouldn't an Underground city technically drive its inhabitants insane?

No, it's fine with such tech level. During my mercenary times I lived about a couple of month or so in current version of the underground city with "open cave" areas, electricity etc. Unusually calm bur cool.

No it is fine. Common science determine that even now we can easily create specific background required to human's mind functioning for a constant period. HD desktop-sized arts will be available during Kickstarter campaign for bakers soon )

Originally used like safety constructions, those pillars was overbuilt to that "cavescrapers". And don't forget about essence of human civilization that should not be lost.

It wouldn't drive people insane, but it would mess with those who are weak willed

I think it would be cozy :P
