As usual I'm trying to make the rezzed version more movie accurate, from what I've seen on EPIII most of the lighting coloring on generators and buildings seems to be blue. Cdn.discordapp.com
Rezzed Map: Literally a replacement for the original map, with HD textures and in some cases added FX. I intend to make a Rezzed version for every default map. A rezzed map should be online compatible (with some exceptions, most of them will be).
Realistic Map: This are altered maps, that replace the originals, but have added props, models, effects, no consideration for filesize and my only interest will be making the environment as realistic as possible. This takes a lot of time (yes, even when working with a pre-made map, this seriously takes a lot of time to make!) so I won't make a Realistic version for every default map. This maps also replace the originals, but won't be online compatible
It's quite likely that the team had no idea how the movie actually looked, since Battlefront 2 was developed to be released in tandem with the DVD release. My guess is they used stills during development to get the right "look" and then based the textures off of that.
Actually in the BF2 trailers Utapau seems to have blue generators its probable one of those things they changed last minute Youtu.be like many other things in the trailer

If you're gonna make them more accurate to the movies, wouldnt the maps have to drastically change with the scaling and positioning?

If they did the console versions wouldn't be able to run it. The PS2 and Xbox 360 versions weren't stable.
