the main point of having to play in Essos is to start the game without the night's watch questline. I don't think you can start the quest from choosing Essos.

you'll get one in 7 days as the qohor's blackmith said. Later on you can also buy another valyrian sword be it 1 handed or two handed(I think?). It'll be very expensive tho I assure you

I think you're supposed to talk to ellaria sand instead of doran in water garden, I just did the same mission and nothing went wrong. Hope this helps
