You are able to recruit some castle units in the city with cavalry and shooters, but only the weaker ones. In the vanilla AI army is largely based on militia from the city.
Units are categorized by the classes, higher class means better and bigger units, but in the same time total amount of recruitable units - the replenish rate effectively is not giving us more number of units.

If you are using steam version do this:
Go to the game folder and copy "medieval2".exe and put it on the desktop, then rename it to "kingdoms" and put it in the same place. Voilà
