i wonder if they are missing or intentionally shooting at that star, and that battle looks confusing i hope ships have a great ai so i can just send them off to kill.

The ships are attacking the star intentionally, they're aiming to blow it up and render the system uninhabitable.

Ship AI should be advanced enough for most uses, so you'll be directing fleet movements, rather than the per-ship tactics during a battle.
