Reference manuals for published versions are available online. Seven books have been written on lua, the latest published by lua have been translated into several languages.   There are links to Books and Papers written by Lua members. As well as many other papers, FAQ, and the Lua Wiki hosted by Lua-users has a good number of Lua Tutorials. Being free and open source the source code is also available through the web as well.
