just played the demo, i'm really liking this.
the choice of having parts of chambers still assembling is a good design choice in my opinion, it helps break up the monotony of the textures and adds contrast. i did notice some stuff wrong though:

there's no beep at the start and end of glados' lines.

some sort of weird issue when you get the portal gun, both portals are on but they're still closed: Puu.sh

also another thing is that there should be an indent on these tracks here, as there is in vanilla portal 2: Puu.sh

these panels reassembling here look silly,(http://puu.sh/inB4) as i think they're meant to be used in the ceiling, not on the wall. replace them with something else, i'm fairly certain there's some more dangly ones meant for deactivated walls.

readjust the lighting here to match the light spot in the observation room, it makes the shadows look very weird: Puu.sh

in the room where you get the portal gun, you need to mess around with the rotation speed or have the gun charge up before firing, so that it matches with the door opening like in p1.

i'm not sure if you can fix this, but see if you can do the thing in portal 2 where if a line is playing while you're in the elevator it will keep going till the line is finished
