That's because for kids, there's a WOW factor when they see anime with blood, gore, epic fighting etc. They are not used to it, on the other hand, for us adults, it's no big deal.
Every day you hear about death on the radio, or see it on TV, hell a few days ago i saw a man die on the street, and it didn't faze me that much.
As an adult you have so much real life problems, that sometimes a good "happy" anime will relax you...
PS: IMO, shonen/seinen are not simply means forteens/foradults. it's more like how the story presented.
typically shonen genre is mainly focuses on characters with "from zero to hero" development, which is suitable for teenagers that is currently in emotional developing toward adolescents.
in other hand, seinen genre offers "deeper" stories that are more suitable to those who are already (or mostly) matured thinking. they are often includes materials that requires special knowledge (complex relations, personality difference, way of thinking, etc.) that most teenagers don't really understand or find them quite boring.
it's not really just about violence or sex contents. they have different genre classifications.
I understand, we adults grew past that edgy stage, and thus wishes to hearken back to a more innocent time...
