they bake normal map onto model so it looks higher poly... i think... not sure... dont flame me?
its a way to create an illusion of that a low poly model has a lot of details when the light hits it. what they have done is that they have created an image from the high poly model with all it small details and put it right on to the low poly. so places that go "in" and "out" on the high poly, but dosent on the low poly will look like it does.

an example on bump map is bullet holes you see in games, it is mostly just a decal that sits on flat surface, with a texture and a bump map.
The name of the creation of a bump map from a high poly to a low poly model is called Bake or Baking.
