Why is it that I can never destroy any enemy units? They can easily defeat my attack of Arqbusiers with a bowmen and when are you going to add bombard units option to catapults?
We will not add a bombard units option to catapults, because it is unrealistic. Catapults were never used as field artillery, they are too inaccurate and do too little damage to formations for that. Units gain bombard ability only with direct fire capability - that is, with first gunpowder artillery.
As for the first question, there can be so many factors at play - terrain, logistics, experience, stack aid etc. It is hard to say without looking at any particular situation. Anyway, inspecting odds should give you a pretty good idea.
This is an amazing mod and you and your team are really talanted for creating it! I played as American Republic on a standard map with a noble difficulty. I built 5 Nordic skirmish units which have an attack capability of 4. I build swordmen units with an attack capability much higher but when I attack an enemy unit with a skirmisher it always has the odds of winning higher than my swordsmen when it should be the opposite. As for catapult bombardment i don't know for sure but weren't they also used to attack enemy formations in mideveal era
Not really. They were almost exclusively used against walls.
As for units, take special care to look at their bonuses, not just their base strength. Often, they have much more impact in combat. Vs melee units, skirmishers have a very high attack bonus. They will get slaughtered if they have to defend or go against archers, though.

Yes, preferably. I actually don't remember if our installer does that for you :-)

As celts I can not build fortified monastery :( I do have Meditation tech and even tried to switch for Monasticism or Militancy civics with no help.
few turns later was able to build them, needed Monastic Order building in city? Not sure
No, not really, should be buildable all the time...
