I've recently noticed that most Imp Star Destroyers seen in mods are all gray, and I'm a bit confused.
Shouldn't they all be white? They're white in the movies?
There's literally a color called 'Star Destroyer White'

In this time period, star destroyers are old, worn and ragged. You are accustomed to seeing brand new star destroyers, which would be all shiny and white. The time of the vong war is after years off fighting. Nothing in this time period is new and shiny.
This is our artistic vision, it is our personal choice to make things look a certain way. Even the default EAW game star destroyers were grey and not white.
When white gets dirty, it looks light grey.
