There are no firing arcs in Stellaris ...well there is nothing tactical in Stellaris, its just blob of ship models meet another blob of ships and then who have bigger fleet or better rock/paper/scissor equip wins

Not entirely true- I suggest you check out ZBueatiful Battles on the steam workshop. You can get something that looks remarkably like SoaSE combat just by tweaking values. But weirdly despite Paradox putting the effort in to create this combat system, they don't give any control to the player. :P

Due to the nature of Stellaris I'm guessing it'll be more about empire building than the ships. Which would be a bit unfortunate being so much of Star Trek revolves around the ships.

that's why something like Star Wars would work better than StarTrek in Stellaris. ST always worked on a more individual scale. Just like B5 despite having Empires. Or Stargate (although I would love to see a SG mod).
The 40k Universe could work marvellously with Stellaris, reenacting the Greeat Crusade etc

I dunno, you're fleets and science ships are an integral part of you're empire. Losing them can change the way you play and can have many setbacks.
