What's the Romulan commander talking about? It's fully possible for a galaxy class to take on two D'deridexes, just ask Star Trek Bridge Commander! Of course that was in a nebula where the Romulans cloak didn't work properly if I remember right, so it might not count.
A D'deridex is a match for a Galaxy even without the cloak. One on one would be a significant challenge for both ships. It's possible but unlikely that a Galaxy would survive a firefight with two warbirds.
ST:BC disagrees with you, but then in that case the Galaxy class was the main character so it might not count.
Well, you can't really take game stats as canonical proof of a ship's tactical strength. In the series the D'deridex was definitely portrayed as a match for a Galaxy in most respects.
Ya, the warbird in that game was in no way a challenge. You could easily stay out of its forward firing arc and then you could take them down one by one forever.

Well the whole idea of an empire building game is to advance and progress through time. I would love it to start pre NX era and go beyond TNG but I don't think they will do that. Not initially anyway.

This makes me really wonder about the Romulans in TLY or whatever it's being called now, the Warbird would make sense as the titan, so how would the rest if their shipyards be fleshed out?.

I honestly don't know how to feel about that. I mean a newer game offers new opportunities but at the same time I was hoping to play in that era on Sins.

I wish the game would allow warships to have a scientist on it and let it explore as if it was a science vessel but still fight. Would be great to create a Galaxy Class like this and have it going around a galaxy doing missions and such.
