Well I don't have a problem reading the text myself but I understand what you mean, in native it's a paper like background so the text fits onto it properly so it may not be as clearly to read as before.
I wouldn't know how to add a box around the text or anything like that so this will have to do.
xPearse I am not mount and blade modder but could you not just work with the source bitmap file add a box around it? I do agree that it is hard to read.
Well the one pic isn't just used for this one screen but many so adding boxes would cause problems with all the other text that would appear so nothing I can do about it.
OK I am a bit new to all off this but when you select in your menu you have created can you not make it so it change the background with the new menu? A other option would be to format all menus to have the same layout which is also good from a UI design perspective. After why would one want the menu to jump around on the screen? But that is just a suggestion from someone who have never modded the game.
It's kind of hard to read the text. Maybe make a box around them that's slightly tinted lighter than the background?

That would require editing and creating scripts, code and such which I don't know how to do so what I have done will have to do.
It's not as simple as choosing which image is used for each screen.
